Renowned Italian-Argentine chef Mauro Colagreco is working his culinary magic on MGM Cotai’s open-air restaurant Grill 58. He is the man behind three-Michelin starred Mirazur, located on the French Riviera, which is also the number one restaurant on The World’s Best 50 Best Restaurants list.

The menu, designed by Colagreco who is famous for his Mediterranean cuisine and use of local and quality produce, offers meat sourced from ranchers in Australia, Japan, the United States and France, plus Mediterranean-inspired seafood dishes.

The restaurant, which overlooks the resort’s atrium through an extensive glass canopy, features a Himalayan salt meat-ageing room, a 4,000-bottle wine cellar, a teppanyaki counter and two private teppanyaki rooms for those who want privacy while enjoying their meat cooked Japanese style.

We start the night with tomato and peach carpaccio, with langoustine, fresh almonds, spring onions and coriander, all the while captivated by digital art and videos showing on the giant high-definition LED screens. This Mediterranean-influenced starter is refreshing, the nutty flavour of the almonds adding a nice touch to the dish. Table bread with Menton lemon-infused olive oil is also served.

The next appetiser is cuttlefish stewed with codfish tripe, basil pesto and fresh green peas, which is tender and tasty. The dish carries a pleasant sweetness from the fresh green peas while the basil pesto in the codfish broth is subtle.
